How It All Began
Owners Matt Vymazal and Christie McIntyre met in college—Matt from Pennsylvania, Christie from Ontario. Matt had never heard of poutine until one late night in Toronto, where his first bite hooked him for life. Determined to bring authentic Canadian flavors south of the border, the duo began recreating Christie’s favorite dishes from scratch, from peameal bacon to Montreal smoked meat.
Crafting the Real Deal 🥘
Frustrated by inauthentic poutine in the U.S., Matt and Christie tested recipes for a full year—gravy, cheese curds, peameal bacon, until they nailed the taste of home. Inspired by Canadian geese flying in a V-formation, “The Flying V” was born. They began as a pop-up tent at breweries, quickly drawing in Canadians and curious locals who couldn’t get enough of the real Canadian comfort food.
From Tent to Truck 🚚
The Flying V gained momentum at festivals and events, soon upgrading to a food truck. For two years, Matt and Christie traveled the Lehigh Valley, Philadelphia, and NYC, sharing authentic poutine with growing crowds. In March 2020, they signed a lease in Bethlehem, PA—right before the pandemic. With community support, they opened their brick-and-mortar in August 2020, expanding beyond poutine to more Canadian favorites.
Making Our Mark 🏆
The Flying V has made waves—serving at Brooklyn’s Smorgasburg, the NYC Food Network & Cooking Channel Food and Wine Festival, and USA Today’s Food and Wine Festival. Christie was named a top influential Canadian in NYC, and we’ve been nominated Best Food Truck in the Lehigh Valley three years running. We've even claimed the “Best French Fry” title from Lehigh Valley Style Magazine and are a beloved staple at Musikfest.
